Wings with Peruvian Green Sauce

Makes 42 to 44 pieces
The marinade:
¼ c. olive oil
¼ c. fresh lime juice
4 lg. cloves garlic, minced
¾ T. salt, or to taste
1 ½ t. ground black pepper
1 T. cumin
1 t. dried oregano
2 t. sugar
3 lbs. chicken wings, tips removed, wings cut in half
In a non-reactive container, combine all marinade ingredients with wings. Allow to marinate at least 4 hours, and up to 8.
Preheat broiler. Remove wings and discard any remaining marinade. Place wings on racks over baking pans 4 inches from heat. Broil for 12 minutes, turn and broil for another eight.
Using tongs, remove wings to serving plates or platter, and serve accompanied by green sauce.
The green sauce:
3 jalapeños, seeded and chopped
1 c. loosely packed cilantro leaves
2 cloves garlic, chopped
½ c. mayo
¼ c. sour cream
1 T. lime juice
2 T. olive oil
Salt and pepper to taste
Combine all ingredients in a blender until smooth, with a bit of texture. Serve with wings.
