Mini peppers are a sweet treat you can feel good about treating yourself to, but they’re not just for salads. With a little prep time, stuffed mini peppers make a fantastic appetizer that looks lovely, tastes divine, and still offers some nifty nutrients.
Ingredients
- 6 mini peppers
- 4 oz cream cheese, softened
- 2 green onions, chopped
- 4 slices bacon, cooked and crumbled
- 1/2 tsp garlic powder
- 4 oz cheddar cheese, shredded
- 1 tsp Worcestershire sauce
- 1 sprig parsley
Instructions
- Preheat oven to 400 degrees.
- Line a cookie sheet with foil and spray with non-stick cooking spray. Set aside
- Combine cream cheese, cheddar cheese, green onions, bacon crumbles, garlic powder, and Worcestershire sauce, and whisk until smooth.
- Slice mini peppers in half length-wise; remove seeds and membranes.
- Fill the sliced mini pepper halves with approximately 1 tbsp of the cream cheese filling.
- Place stuffed mini peppers on prepared cookie sheet.
- Bake at 400 degrees for 10 minutes until cheese is melted and bubbly and peppers have softened.
- Serve hot, but allow the mini peppers to cool slightly before eating to prevent mouth burns. Safety first! Remember, this tasty treat just came out of a 400 degree oven.
